PIRIPIRI SAUCE
Here is my favorite PiriPiri Sauce recipe. It can be used to marinate, baste and roast a whole chicken, shrimp or fish (salted and marinated overnight in the fridge), added to any stir fry for extra flavor and heat, or even on scrambled eggs or salad. Use it sparingly until you know how much is good for you.
In a blender or food processor, process to a smooth paste:
- 4 dried chili peppers, crushed, or 2 heaping teaspoons cayenne pepper
- 2-3 garlic cloves, crushed
- 3-4 tablespoons chopped fresh parsley or fresh cilantro
- 1/4 tsp sea salt
- juice of 2 medium lemons
- 1 cup peanut or vegetable oil
Store in a jar with tight lid 2 weeks, refrigerated 1 month.
GRILLED PIRIPIRI SHRIMP APPETIZER
- 2-3 lbs large shrimp, peeled and deveined
- 1 batch PiriPiri Sauce
Place shrimp in a large bowl and pour PiriPiri Sauce over the shrimp. Mix well and marinate for several hours.
To grill. Skewer shrimp on bamboo which have been soaked in water for 1/2 hour.
Grill 3 inches frame charcoal, 3 minutes per side.
Serve with PiriPiri sauce ( heat the marinade to a simmer and allow to cool slightly)
