LA BONNE TABLE PRESENTS A CULINARY TOUR OF TUSCANY

ITALY, WHERE THE beauty of the landscape is surpassed only by the quality of the cuisine! This is your invitation to join Victor Beguin, head chef of La Bonne Table Culinary School in Peterborough NH, for a glorious week in the heart of Italy's finest culinary traditions.

We stay in Tuscany, a region that requires little introduction. It is a province of great beauty and symmetry: its gardens, farmhouses, orchards, olive groves and cypresses evoke a sense of order undisturbed over the centuries. Our sightseeing explorations will include the extraordinary cities of Florence and Pisa, and San Gimignano where you'll walk through centuries of history, architecture and, of course, magnificent art.

Of the many cultural treasures of Tuscany, the "simpler pleasures" -- the arts of cooking and eating -- are intrinsic to the Tuscan experience. Refined and tasteful, the local fare offers plain grilled meats, grains, fresh vegetables and an abundance of premium mellow cheeses. Fresh herbs such as marjoram, juniper and rosemary enhance the flavors of game, meal and fish from Tuscany's coastal waters. A "no frills" style of cuisine that allows the natural flavors to reach their peak is deeply satisfying and nourishing. Homemade breads and soups are daily fare. A passion for those noble members of the legume family -- beans -- is fundamental (Tuscans have been called mangiafagioli, "bean eaters," but not always by way of a compliment!). Of course wines are abundant and varied, and are essential to our explorations.

From Tuscany's rich resources, we will draw on the guidance of some excellent local chefs. We heartily subscribe to the old Tuscan saying: "You don't want some fancy chef in the kitchen, you want Mama!" During our week in the gorgeous late Tuscan spring, as its many treasures unfold before us, we shall live and eat as Tuscans, revisiting some favorite dishes, discovering new ones, and absorbing all we can of the cultural riches surrounding us.

Accommodations are in the fabulous Villa Gamberaia, full of character and atmosphere. A large well-equipped kitchen will be our classroom, and double rooms with en suite bathrooms ensure plenty of privacy.

The price includes round trip airfare on Alitalia from Boston to Milan, first-class accommodation, all meals as outlined on the day-by-day itinerary, including two restaurant dinners, wine with all villa dinners, all excursions and transfers, and all cooking in-struction.

Day 01, Friday May 17th
Overnight: Plane

Departure from Boston, Logan airport where we board Alitalia's direct overnight flight to Milan.

Day 02, Saturday May 18th
Overnight: Tuscany

Upon arrival at Milan Airport, you will be greeted and transferred by minivan to our elegant Italian villa. A splendid cold buffet of local delicacies will be awaiting your arrival at the villa. Time to rest from the flights before an orientation to the coming week by Victor Beguin, your host and chef, and your bilingual courier. This evening there is a welcome dinner party. Day 03, Sunday May 19th
Overnight: Tuscany

Breakfast served in a leisurely fashion at the villa, before local explorations. For lunch we will introduce you to a selection of the local breads, cheeses, olives, fruit and vegetables. This afternoon it's time to roll up our sleeves and delve into the fine Italian tradition of pasta making. While the pasta is drying, two or three regional sauces will be demonstrated which we will sample for dinner this evening. (B, L, D)

Italy Day 04, Monday May 20th
Overnight: Tuscany

This morning we will venture into the nearby town to replenish our food supplies at the local markets under Victor's expert guidance. While there, we will have time to explore, take care of banking and personal business and return to the villa after lunch (on your own). This afternoon, a practical cooking class with a focus on regional specialities with our guest chef. (B, D)

Day 05, Tuesday May 21st
Overnight: Tuscany

After breakfast today there is a full day excursion into nearby Florence Đ"the Cradle of the Renaissance." Sightseeing will include the Duomo and the incomparable Uffizi Gallery before we have free time to lunch and shop. This evening, dinner is included at the fabulous Villa San Michele in the hills of Fiesole, overlooking the city. (B, D)

Day 06, Wednesday May 22nd
Overnight: Tuscany

Breakfast and a free morning to relax or take a stroll. After a light lunch, there will be an excursion to Pisa. We return to the villa to see what Victor and the staff have in store for us this evening. (B, L, D)

Day 07, Thursday May 23rd
Overnight: Tuscany

Breakfast will be followed by an excursion to a local vineyard. We will take along a picnic lunch and find a suitable pastoral setting in which to enjoy it. This afternoon will be spent in town where you will be free to sample a local restaurant for dinner. (B, L)

Day 08, Friday May 24th
Overnight: Tuscany

After breakfast today there is an excursion to San Gimignano, known as "the City of the Towers." We return to the villa in the afternoon to help prepare our farewell feast -- a spectacular Florentine banquet. (B, D)

Day 09, Saturday May 25th
Overnight: Home

All good things must come to an end and we transfer this morning back to Milan Airport for our returning Alitalia flight to Boston. (B)

THE VILLA GAMBERAIA

From the moment you pass the gate, with its sentinel cypresses, the impres-sion is one of such perfect loveliness that at last, by force of contrast, the mind goes back to strong Caprarola or tragic Este, only to turn once more to bathe in the pefection of the Tuscan villa.

Set on the hills of Settignano, close to Florence, yet immersed in the tranquillity of the Tuscan countryside, the Villa Gamberaia enjoys an exceptional position overlooking the city and the Arno valley.

Strolling through the celebrated Italian gardens, visitors can contemplate the beauty of their design and their unique setting in the surrounding Tuscan landscape. Rich in history, the Villa Gamberaia discloses its charms little by little to those who allow themselves the time to look, think and explore.

A LITTLE HISTORY Villa Gamberaia
Completed in the early seventeenth century by the Florentine noble Zanobi Lapi in the Tuscan style, the villa combines interesting architectural features of both an urban palazzo and suburban villa. In the eighteenth century the property belonged to the Marchesi Capponi, and by that time the house and gardens had acquired the characteristic elements seen in the famous engraving by Giuseppe Zocchi (1744): the cypress allŽe, bowling green, nymphaeum, grotto garden, boschi, parterre and lemon terrace.

At the end of the nineteenth century, Princess Giovanna Ghika began the transfor-mation of the parterre de broderie into the beautiful parterre d'eau, enclosed at its southern end by a majestic cypress arcade. Elegant expressions of topiary art were created by the American-born Mathilda Ledyard Cass, Baroness von Ketteler, in the following decades. After the Second World War, the Villa became the property of Marcello Marchi and then of his heirs Luigi Zalum and family, who have continued the work of restoration and conservation.

THE GARDENS
Villa Gamberaia Gardens Set on the hillside of Settignano, with extraordinary views of Florence and the surround-ing Arno valley, the Villa Gamberaia is renowned for its splendid gardens, celebrated throughout the world by leading landscape architects and garden historians.

The plan of the Gamberaia...combines in an astonishingly small space, yet without the least sense of overcrowding, almost every typical excellence of the old Italian garden: free circula-tion of sunlight and air about the house; abundance of water; easy access to dense shade; sheltered walks with different points of view; variety of effect produced by the skilful use of different levels; and, finally, breadth and simplicity of composition...

Certainly the minds of the Florentine family of Capponi were original and inventive. First, in 1570, they created the beautifully detailed asymmetrical gardens at Arcetri overlooking Florence, a simple design that has the archetypal similarities to Bingham's Melcombe in England; and in 1717 they finally synthesised and completed the slowly evolving complex of the Villa Gamberaia at Settignano across the Arno valley, whose concept of a domestic landscape is by general consent the most thoughtful the western world has known.

Several houses on the property have been carefully restored and converted into comfortable guest houses, furnished with family antiques, yet equipped at the same time with modern appliances and conveniences: Cappella and Nettuno (along the Garden Avenue), the former belonging originally to the 17th-century Chapel, the latter once an indoor ball court for palla a corda; and the Limonaia (adjoining the Lemon House), an historic 15th-century farmhouse, which belonged to the family of the distinguished sculptor and architect Bernardo Rossellino. Guests are invited to use the gardens and private swimming-pool.
